Blackberry Jam Cake
1 c Raisins
1 (8-1/2 oz) can crushed pineapple
1 c Butter
1 c Sugar
5 Eggs
1 c Cogdell Berry Farm Blackberry Jam
2 1/2 c Sifted flour
1 tsp Baking soda
1 tsp Ground cinnamon
1 tsp Nutmeg
2/3 c Buttermilk
1 c Chopped pecans

Soak raisins for several hours or overnight in pineapple and juice. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating after each one. Stir in jam. Sift together dry ingredients. Add alternately to creamed mixture with buttermilk. Stir in fruit mixture and pecans. Pour batter into greased 13 x 9 x 2" pan. Bake in moderate oven (350) 50 to 55 minutes. Cool on rack. Dust with sifted confectioners’ sugar to serve.

Bewitching Blueberry Pancakes
1 1/4 c. flour
2 1/2 tsp. baking powder
3 tbsp. sugar
3/4 tsp. salt
1 egg, beaten
3/4 c. milk
3 tbsp. oil
1/2 c. fresh or frozen blueberries

Sift together dry ingredients. Beat egg and milk together and add to dry ingredients with oil. DO NOT OVER MIX. Stir only until dry ingredients are moist. Gently fold in blueberries. Pour on a hot griddle and watch carefully until golden brown. Serve with Cogdell Berry Farm Blueberry Syrup.

Sweet and Zesty BBQ Chicken Quarters
4 to 6 chicken leg quarters
salt and pepper
2 tablespoons vegetable oil
1 can (8 ounces) crushed pineapple, undrained
1 cup Cogdell Berry Farm BBQ Sauce
1 tablespoon all-purpose flour
1 to 1 1/2 tablespoons cold water
1/2 teaspoon ground ginger

Wash chicken pieces and pat dry; sprinkle with salt and pepper. Heat oil In a large skillet over medium-high heat. Add chicken pieces and cook, turning to brown all sides. Arrange the browned chicken in an 11x7-inch baking dish (or larger). Combine pineapple and blackberry barbecue sauce in a small bowl. Combine flour and water in a cup and stir to form a smooth paste. Stir into the barbecue sauce mixture along with the ground ginger. Pour the sauce over the chicken pieces. Bake in a preheated 325° oven for about 1 1/2 hours, or until chicken is tender and juices run clear. Baste with sauce occasionally while the chicken is baking.
